Bruschetta with Sundried Tomato and Mozzarella

Serves 4

 
 
Ingredients:
8  (1/2 inch) thick slices Italian bread
2 tablespoons La Piana® Organic Extra Virgin Olive Oil
1 garlic clove, halved
¼ cup La Piana® Grilled Sundried Tomatoes, chopped
¼ cup mozzarella, cubed
1 tablespoon fresh basil leaves, minced
1 ½ teaspoon La Piana® 20 year Balsamic Vinegar of Modena

 

 
Preparation:
Toast the bread slices on a baking sheet in the upper third of a preheated 500° oven until they are golden.  While the toasts are warm, brush both sides of the toasts with the oil and rub them with the garlic.  In a bowl combine the tomatoes, mozzarella, basil, balsamic vinegar and salt and pepper to taste and top the toasts with the mixture.
